White rum

The production of white rum begins with the fermentation and distillation of sugar cane juice or molasses. After distillation, the rum is reduced to the desired drinking strength, which must be at least 37.5 % vol. A special variant of white rum is overproof rum, which has an alcohol content of 57.15 % vol. to 70 % vol. or more.

After distillation, white rum is usually stored in steel tanks, which preserves its clear colour. This storage can last between three and 30 months and serves to allow the liquid to settle and a so-called "reduction" to take place. In contrast to matured rum, which is stored in wooden barrels and therefore develops a darker colour and more intense aromas, white rum remains colourless and light in taste.

To ensure the clear colour of white rum, many producers use various filtering methods. One common method is filtration through activated charcoal, which removes any traces of colour and makes the rum "white" again. White rums that have been stored in oak barrels for a short time and have therefore taken on a slightly brownish colour can also be decolourised again using this filtration method.

The production costs and therefore the final price of white rum are lower than for brown rum, as there is no need for costly barrel storage. This pleases the connoisseur!
